Shrimp Creole

Dice the sausage, Peel and roughly chop the onions, Peel and finally chop the garlic. Halve core and dice the bell peppers.


Drop the tomatoes into boiling water for a few seconds, refresh in cold water, then skin, quater, de-seed and dice.


Cook the rice in salted water according to the package instructions. Meanwhile trim the okra and cut into pieces.


Heat the oil in a large pan and saute the onions and garlic until translucent. Add the sausage and saute briefly, then add the bell peppers, okra, spices, bay leaves and broth (stock). Bring to a boil, cover and cook for about 12 minutes.


Finally add the rice, shrimps (prawns), tomatoes and scallions (spring onions) and cook gently for a further 5 minutes. Season to taste with salt and Tabasco and serve.
